Waste as a resource: How Can Surplus Bread Become a New Product?

According to data from the Polish start-up Rebread, a staggering 1.3 billion tons of food waste is generated globally every year, with 30% of food waste in Europe coming from bakery products. The Food 2 Good project's goal is to recover surplus bread and spent coffee grounds and transform it into something valuable.

A Circular Solution to a Global Problem

The Food 2 Good project, in collaboration with partners Rebread, Ecobean, the University of Warsaw, and our experts at Cyrkl, is taking on this challenge with an innovative approach. Rebread’s technology extracts useful ingredients from surplus bread and spent coffee grounds to produce biodegradable products, snacks, and even fermented non-alcoholic beverages.

At its core, this project is about turning waste into value, providing a circular solution for the food industry. The aim is not just to reduce waste but to create a sustainable model that brings bread back into the consumption cycle.

How Cyrkl Can Help

One of the major hurdles of the Food 2 Good project is sourcing enough unsold bread. This is where our digital waste marketplace plays a crucial role. From next year, we will connect businesses that generate food waste, helping them recycle and repurpose unsold bread into new products for human consumption.

We are certain that our involvement will help bringing stakeholders together—from bakeries to convenience stores—ensuring that surplus bread is repurposed, contributing to a circular economy.

Food 2 Good Project Goals

The project sets out several ambitious objectives:

  • Reducing bread and coffee waste in the value chain.
  • Introducing a nutritious circular beverage to the market.
  • Promoting a fully transparent, fair, and resilient food supply.
